Shorba Yavron – afghan soup

Afghan soup, good taste.
Shorba Yavron

  • 3 tbsp corn oil
  • 2 onions
  • 1/2 tsp salt
  • 4 cups of water
  • 2 potatos (sliced, 1 inch)
  • 2 carrots (sliced, 1 inch)
  • 2 ribs celery (sliced)
  • 1/4 tsp pepper
  • 1/4 tsp ground cinnamon
  • 1 egg
  • 2 tsp fresh flat-leaf parsley, chopped


Great soup for dairy occasions or for very hot days
Heat the saucepan, heat the oil, add onions and half of the salt. Cook to golden brown, add water, potatoes, celery, carrots, rest of the salt, pepper, cinnamon and bring to a boil.
Simmer about 30 minutes, covered. Dribble beaten egg into pan of soup in a circular motion. Sprinkle w/parsley. Serve hot.

Qabili Pilau – afghan dish

Qabili Pilau is good afghan recipe. It has a special taste, I used chicken, not a lamb.
Qabili Pilau - afghan recipe

  • 500 g long-grain rice, basmati
  • 120 ml oil
  • 700 g lamb (or 500 g of chicken steaks)
  • 2 cups of water
  • 2 large carrots
  • 110 g black raisins
  • 1 teaspoon ground cumin
  • 1 teaspoon ground cardamom
  • 1/4 teaspoon saffron (optional)
  • 1.2 liters of water
  • salt and pepper

  • Preparation
    Slice onion and fry until dark brown, add meat (diced (about 4x4cm)). Saute untill light brown.
    Add 2 cups water, 1 teaspoon salt and 1 teaspoon of cumin and cardamom and 1/4 teaspoon saffron.
    Cover and simmer until the meat is tender, about 1 hour.

    Take the meat beside. Chop the carrots into thin slices and easily fry the sugar to brown (in 1/4 cup of oil).
    Take it out and add a cup of raisins and simmer to tender.
    Take out the stock, put it to saucepan with rice, 1 ½ teaspoon salt and pour with boiling water which is about 5 cm above the rice. Simmer until rice is softened but not completely.
    Preheat the oven to 150 ° C, put there complete mixed rice, meat, carrots and raisins and bake for about half an hour.
    Serve with the carrots and raisins on top.

Afghan Khatai cookies

First week is afghan week! I tried to make Khatai cookies. It was not bad. See the photo and recipe.

Khatai cookies


  • 1 and 1 / 2 cup flour
  • 1 cup sugar
  • 1 tablespoon ground cardamom
  • 3 / 4 cup corn oil
  • groundd pistachios

Preheat the oven to 180 °C. Mix flour, sugar and cardamom, then add the oil and mix.
Make small balls about 4 – 5 cm and put them on a cookie sheet.
Bake for 15 minutes. Why they are still hot, sprinkle ground pistachios on top of the cookies.
